Lemon Butter Garlic Kale

Ingredients

  • 6 cups (packed) of chopped kale

  • 2 tbsp butter

  • 3 garlic cloves, minced

  • 1 tbsp lemon juice

  • 1/4 tsp salt

Instructions

  1. Wash and pat dry the kale, then tear the leaves off the stem and shred or chop into small, bite-sized pieces.

  2. Heat butter in a large saucepan over medium heat, then add the kale. Coat evenly with butter.

  3. Add the lemon juice, garlic, and salt.

  4. Continue tossing the kale until slightly wilted, roughly 5 minutes. Remove from heat and serve.

  5. Optional: Add your favorite protein (meat, tofu, etc.) to make this a main dish!
