Garlic Roasted Radishes

Ingredients

  • 1 bunch of radishes, sliced in half with tops removed

  • 1 tbsp olive oil

  • 1-2 cloves minced garlic (1 & 1/2 - 3 tsp)

  • 1/4 tsp dried parsley, dried chives or dried dill

  • Salt & pepper

Instructions

  1. Pre-heat oven to 425 degrees.

  2. In a bowl, mix the sliced radishes with olive oil, salt, and pepper. Wait to add the garlic until the radishes are almost done roasting.

  3. Place on a large baking sheet in a single layer and roast for 20-25 minutes, until fork tender and golden brown. Toss every 10 minutes or so.

  4. Add garlic and dried parsley in the last 5 minutes of roasting time.
